Question on recently planted peach trees?

I recently planted many fruit trees, some of the peach trees and plum trees are getting the leaves chewed on with tons of holes, see no worms or aphids ect just see some ants. Can ants eat the leaves on fruit trees? Also what is the safest way to spray and safest product to get rid of whatever is doing this? Is there a grreat place with diagrams to show me how to keep my new young tree branches trimmed and when to do it? I need guidance on taking proper care of my trees. Thank you.
